…pre-heated fan oven at 170°C for 1 hour 45 minutes. That’s it, add anything else and you’re a cunt. When the chicken is finished take 500ml of stock (you can use a stock cube they’re fine) to wash the bottom of the roasting tin with and melt all that caramelised butter into it. Thicken with half cornflour, half gravy browning.

I just KNEW we made chicken gravy the same way. Except that I have found you get far superior results ditching the stock cubes and using the proper home made stuff.
