For you!!

1 tbsp olive oil; one bunch salad onions diagonally sliced; 1 clove garlic crushed/ 500g frozen shelled prawns defrosted and drained; 250g tub mascarpone cheese; 2 tbsp lemon juice; 2 tbsp freshly chopped dill; salt and freshly ground pepper; 250g fusilli cooked and drained.

1. heat oil and fry onions and garlic for 2 mins

2. Add everything else except the pasta and cook for a further 5-6 minutes stirring occasionally.

3. Stir in the cooked fusilli and serve immediatelywith warm ciabatta and green salad.

PS: I use the raw prawns. if you get cooked ones don't add them till the end coz 5-6 ins will be too long and they'll go hard.

It is the EASIEST best thing ever

I always make double because it tastes divine when it is cold and the mascarpone cheese has all sort of set . . ..
